“Weekly Menu”

Monday May 05/08 thru Saturday May 10/08

Cinco de Mayo”, “Mothers Day” lots of celebrations this week. Let’s sale a lot of fish.

Florida Black Grouper open up with the new month; Soft Shell Crabs are coming back, Fiji, New Zealand as well as Australian fishermen are working hard to provide plenty of fish this week. Japan’s “Tsukiji Market” will be closed the first two days of the week, but we should be back in time for “Mother’s Day” weekend, farmed fish will be available as usual.

Ocean Trout.-           Whole, Gutted, size 5 to 6#.

Tasmanian Ocean Trout are from the Pacific Salmon family of trout, and essentially it’s a cross between the steelhead and rainbow trout. High omega 6 content which makes for ideal eating fish.

Habitat:

Petuna's hatchery is located in Cressy, in the North East of Tasmania, and draws mountain-fresh water from Tasmania’s Great Lakes.  After being incubated and reared to an average size of 300 grams the fingerlings are transported in a water tanker to the fish farms in the wilderness-fed waters of Macquarie Harbour at Strahan.

Here the fish enjoy the health benefits of being in between a lower layer of ocean salt water sweeping in from the Southern Ocean and a surface layer of the purest fresh water from the wild rivers of Tasmania’s South West.

Soft Shell Crabs.-       Prices started high, they may stay up there this week, but we will bring “Primes” and “Jumbos” to make it affordable for every body. We will have them available on Monday (Jumbos only) and Tuesday we will have both sizes.

Dry Scallop Meat.-     This week we will feature “Dry” U/10’s and 10/20’s from Cape Cod as well as the “Garra de Leon” 6/8’s from Mexico.

Alaskan Halibut.-       Although prices are still very volatile, and this week price is slightly higher, we will maintain the same price. (FYI: Many boats are going out and come back at the same time, business are somewhat slow, so the market can’t handle so much fish that fishermen have to drop the price, then the other boats that stayed go out and come back when there is no much fish in the market, then the demand is higher so the price go up again)

Monk Fish Tails.-       Price still dropping, just in time for this week holydays, we will be getting fish out of Rhode Island as well as Boston.

Alaskan Red and White King Salmon.-        Very good fat content, price started to go down, hopefully gets better for the weekend.

Mahi Mahi.-   We will bring plenty of fish from Fiji for this week.

Also there will be plenty of: Kona Kanpachi, Loup de Mer, Dorade, Tai Snapper, and some Atlantic Black Sea Bass as well as Florida Black Grouper and N.C. Red Grouper.

Thank you,

Alfredo
